Baklava Pinwheel Cookies
Walnuts, honey, and cinnamon bring the flavors of baklava into this chewy pinwheel cookie. Not the prettiest cookie, but oh so tasty with a nice cup of coffee or cappuccino.

I love these cookies!
BUT!
The dough, even refrigerated for 2+ hours, was difficult to roll out. It gets warm very fast! I ended up putting it between two strips of plastic wrap whiche helped enormously.
The next issue was the instructions said to chill the honey-walnut mixture. Do not refrigerate it - just leave it on the counter. I had to scrape it out of tye pot into a dish and microwave it to get it to a spreadable consistency.
My next problem was this makes far more than 48 cookies. I cut the refrigerated log in half, sliced the cookies 1/4 inch thick and did not pay attention to what the directions said about spacing. They absolutely need a minimum of two inches between them. Three inches is probably safer. Because mine were so close together, I ended up with basically one giant cookie.
The last problem is I used parchment paper instead of a silpat. Getting the cookies off the paper was a bit tricky. Even properly spaced, it would have resulted in a fair amount of damage. So use silpat. I would not spray parchment - you'll have a greasy mess.
All that being said, these are absolutely delicious cookies! And for the amount of ingredients, you get a lot of cookies. I's say, done right, you can get at least 80.
I unequivocally recommend you make these but with the cautions I've outlined above.
