  • Combine 1 tablespoon olive oil, Greek seasoning, lemon juice, and garlic in a glass bowl; mix well. Add chicken to marinade and turn to coat. Marinate in the refrigerator for at least 2 hours, but not longer than 4 hours.

  • Mix tzatziki, 2 tablespoons olive oil, 2 tablespoons lemon juice, and salt in a small bowl. Refrigerate salad dressing until needed.

  • Preheat an outdoor grill for high heat and lightly oil the grate.

  • Place chicken pieces on the grill and cook for 5 minutes, turn, and grill until no longer pink in the center and the juices run clear, about 5 more minutes. An instant-read thermometer inserted into the centers should read at least 165 degrees F (74 degrees C).

  • Combine romaine lettuce, bell pepper, cucumber, and cherry tomatoes in a salad bowl. Drizzle with tzatziki dressing and toss to coat. Divide salad into 4 equal portions and top with cooked chicken.

I'm sorry to have to rate this recipe as 1 star. I love souvlaki and tzatziki so I checked this recipe to see if it offered an sort of unique spin that might be worthy of changing my tried and true recipe. This recipe is inadequate, IMO, because it calls for two items with no explanation, tzatziki sauce and "Greek Seasoning". I know in some stores you can find pre-made tzatziki, but it isn't all that common in my experience. It isn't hard to make and is good on many things. The recipe would have been more complete with instructions to prepare this. And what is "Greek Seasoning"? Yes, there are several spices that are common in Greek cooking, but saying Greek Seasoning would be like a recipe for Tiki Masala including, "Indian Seasoning" or Crepes Suzette calling for "French Seasoning". Excellent in my book! I didn't feel like making pita bread and was already thinking of souvlaki salad when I found this recipe. So simple full of flavor and the perfect dish for a hot summer day. Very light and refreshing. The only change I might make next time would be to use a little less lemon juice in the marinade because the chicken seemed very lemony to me. However once all components of the salad were put together the flavors seemed to balance. I used mixed green salad blend as that's what I had on hand. Will definitely make this recipe again. A simple yet very tasty recipe. I used chicken tenders instead of the full breast: less work and they re typically still moist after grilling. We put the cooked tenders (cut into medium-sized pieces on top of warmed pita bread add lettuce tomato & cucumber (again each in medium-sized pieces) and plenty of tzatziki sauce.
