  • Combine sugar, margarine, almond milk, and cocoa in a saucepan. Bring to a boil, about 5 minutes. Let boil for 1 minute and remove from heat. Stir in peanut butter until melted. Pour in vanilla extract and almond extract and stir well. Add oats and coconut and mix dough until combined.

  • Drop cookie dough by tablespoons onto wax paper. Let set and cool completely, about 30 minutes.

Cook's Notes:

You can use butter instead of margarine, and regular milk instead of almond.

You can use 2 teaspoons vanilla extract instead of the combination of vanilla and almond extract.

I halved the recipe and got 16 cookies using a 1 tbs cookie scoop. After sitting for an hour these cookies had not set up so I stuck them in the freezer for 30 minutes. I was finally able to peel them off of the parchment paper. They're just ok in flavor but a little too sweet. When they came back to room temperature they were rather sticky.
