Following the keto diet, this casserole is cheesy, creamy, and easy to prepare. Any cheese can be used and any cut of chicken. I prefer chicken thighs because I find them more flavorful. The choice is yours.

  • Melt butter in a large skillet over medium heat. Whisk in cream cheese, Gouda cheese, mayonnaise, chicken broth, and ranch dressing mix. Reduce heat to low and cook, stirring constantly, until completely incorporated, 4 to 5 minutes. Stir in broccoli, chicken, salt, and pepper until combined. Transfer to a casserole dish and top with Cheddar cheese.

  • Bake in the preheated oven until cheese is melted and broccoli-chicken mixture is heated through, about 25 minutes. Switch the oven to broil, and cook until cheese starts to brown, 2 to 4 minutes.

I made this recipe as directed, and while otherwise delicious, it tasted too salty. I used rotisserie chicken and the Hidden Valley Ranch mix as directed. Next time I will make sure I use unsalted butter in the pan, and I may even need to make ranch dressing from scratch to reduce the sodium. However, the chicken, cheese sauce, and broccoli was fantastic! UPDATE (6/8/20): I made this again but this time omitted the salt from the recipe and used unsalted butter. It was better, but it still seemed salty to us. Next time I will make ranch seasoning from scratch. Read More

5 stars for the recipe! Lost a star because this does NOT make enough to feed six people. 1 and 3/4 c of diced chicken was approximately 1 and 1/3 chicken breasts for 6 people? Even with the broccoli, it’s not enough food to be a filling meal for six adults. It makes enough sauce, so next time I will just add more chicken and broccoli, maybe a tad more cream cheese to stretch the sauce. Recipe is excellent and delicious though! Read More

Delicious! I had to modify due to lack of ingredients. Substituted gouda with cheddar and used herbs rather than the Ranch Dressing mix. Will make this one again! Read More

Perfect Keto macronutrient ratios! Yahoo! Would be a 5 star, except that I found it to be overly rich. I think that it might be best cold and rolled into balls to be used as a quick-grab, keto-perfect snack. Will try that. Read More

My husband and I loved it! We did not use the ranch seasoning packet and feel it would be way too salty if we did. It was great without. I did squeeze in a tad of ranch dressing. Read More
