  • Combine kale, apple, sunflower seeds, and cranberries in a large bowl.

  • Whisk together olive oil, honey, lemon juice, apple cider vinegar, cinnamon, salt, and pepper in a separate bowl. Drizzle vinaigrette over kale and mix with salad by hand, massaging dressing into leaves.

  • Cover and refrigerate for at least 1 hour before serving.

Cook's Note:

You can use pine nuts instead of sunflower seeds, if desired.

If your bunch of kale is on the smaller side, make a half batch of dressing or it'll be way too oily. Add only part of the dressing, massage kale until everything is covered and volume is reduced by about half. If your hands are slippery, there is enough dressing! If the dressing has been absorbed after being chilled, add a bit more dressing to moisten. I also added lemon zest to the dressing. Read More
