Ingredients

  • 3 cups coarsely chopped kale, stems removed

  • ½ small red onion, quartered and sliced

  • ½ cup cranberries

  • cup chopped walnuts (Optional)

  • cup sunflower seeds (Optional)

  • ¼ cup goat cheese

  • 3 tablespoons raspberry salad dressing

  • 1 dash balsamic vinegar (Optional)

  • salt and ground black pepper to taste

Directions

  1. Combine kale, onions, cranberries, walnuts, and sunflower seeds in a large bowl. Crumble goat cheese and add to salad. Add raspberry dressing and balsamic vinegar to the bowl and toss gently to coat. Season with salt and pepper.

Cook's Notes:

The trick to remove the bitter kale flavor is to gently rub/massage the kale with your fingers for a minute after chopping.

Use any nuts and seeds you prefer.
