  • Melt coconut oil over medium-high heat in a large frying pan. Add onion, carrot, and garlic; stir-fry until tender, about 3 minutes. Add shrimp and ham; stir-fry until shrimp are almost cooked through, about 2 minutes. Add rice and soy sauce and continue to cook and stir for 1 minute. Season with salt and pepper and remove from heat.

  • Stir pineapple, tomato, and green onions into fried rice mixture until thoroughly combined.

Very quick and easy! I used sesame oil instead of coconut oil for a more savory taste and I also cooked an egg with it for some richness. I only used Spam for the meat but it would be delicious with chicken, shrimp, or pork too. Next time I’m going to add sugar snap peas! Read More

This hit the spot. The pineapple is so good! I eliminated the ham and cooked up 20 shrimp. I also added the soy sauce to the veggies and the shrimp prior to the rice. I used 4 TBS (sounds like so much but it was pretty spot on- if you didn’t add the salty ham). I also added a cup of celery that I needed to use. For the rice, 2 bags of ready rice in jasmine.
