  • Heat oil in a large pot over medium-low heat. Add onions and cook until soft and translucent, 10 to 15 minutes. Add garlic and cook 1 minute more. Add red and yellow bell peppers, chili powder, red pepper flakes, cayenne pepper, and salt and cook for 1 minute. Add tomatoes, chicken stock, red beans, black beans, and basil. Bring to a boil, about 5 minutes. Reduce heat and simmer, uncovered, for 30 minutes, stirring occasionally.

  • Add chicken meat and sausage to the pot with the chili and simmer, uncovered, for another 20 minutes. Season with black pepper.

I had a homemade roasted chicken that I desperately needed to use up. This recipe is the solution. I replaced a couple of ingredients given some food restrictions in my household. I used red pepper for yellow pepper did not use red pepper flakes. I used a pinch of cayenne only and used canned diced roasted tomatoes. This was very good. I think it can use a bit less of some of the ingredients but then again the outcome is very good and I love the fact that it came out in a happy medium texture: not too soupy nor too thick. It was simple and easy to follow the instructions. I did not have any chili powder or red pepper flakes so I added my own little spice pepper along with the cayenne pepper. My kids loved it! Read More
