  • Combine paprika, thyme, cumin, cayenne pepper, onion powder, black pepper, and salt together in a bowl. Transfer spice mixture to a flat plate.

  • Rub oil over each chicken breast until fully coated. Roll each piece of chicken in blackening spice mixture, making sure to press down so spice sticks on all sides. Let sit for 5 minutes while you preheat the air fryer.

  • Preheat an air fryer to 360 degrees F (175 degrees C) for 5 minutes.

  • Place chicken in the basket of the air fryer and cook for 10 minutes. Flip and cook an additional 10 minutes. Transfer chicken to a plate and let rest for 5 minutes before serving.

This was the best chicken I've ever made. Usually chicken breasts get dried out and tough, but this was definitely not. The spice rub is flavorful and, yes, spicy. But the chicken! It was juicy and tender and perfectly done. Wonderful! I also cooked the air fryer baked potato, which was a perfect compliment. Definitely will make again. Read More

I used tenderloins instead of whole breasts, so they came out a bit dry, so next time will play with the temperature and times a bit. Also, one tenderloin picked up all the spice mix, so I made more and blended in some breadcrumbs to extend it a bit and that worked out pretty well. Finally, felt like i needed some kind of sauce, but didn't have any ideas what works, so I wound up making something of melted butter, garlic powder, and honey that went really well with it.
