This was delicious. The neck bones are not easy to find. One comment about the steps. It s missing the step for putting the meat back in before the end. In step one it has you remove the meat and set it aside. Then at the end it has you remove the bones from the pot to separate the meat. Where is the step in between?
We live in Lafayette, Louisiana and thought this was a very good recipe. Instead of pork neck bones and bacon, we substituted 1 link of sliced Cajun sausage (we always buy Hot) and 1 link of sliced and quartered chicken and green onion sausage (ham bone would have been good here as well). We would never cook rice in our red beans, so we did that on the side (not everyone wants the same amount of rice). We then doubled the whole recipe and it was delicious! We did not find it too spicy at all - just right. Not too much cayenne, but if you're sensitive to spicy foods, you can cut the cayenne, use mild sausage and let whoever's eating add their own spice. Good recipe! Aiyeeee!
Delicious! Just make sure to adjust the white pepper, black pepper, cayenne pepper & Cajun seasoning to the heat level you are comfortable with. I omitted the cayenne and reduced the white and black pepper and it wasn’t too spicy but was amazing!
It you want a kick to your red beans and rice, key word “NOLA” then this is the perfect recipe for you. I made it exactly how the recipe said. The meat easily fell off the bone. My 5 year old asked for thirds. If you can’t stand the heat then stay out the kitchen!!!
