  • Combine apple cider vinegar, strawberry puree, and honey in a mini blender; blend until smooth. Pour into a glass container and add poppy seeds. Let rest on counter for an hour for flavors to marinate, then store in fridge.

Cook's Notes:

I serve this over 12 oz of baby spinach with a handful of dried cranberries and 2 tablespoons of roasted nuts. I like pine nuts but they are very expensive so I usually use a combo of pine nuts, slivered almonds, and pumpkin seeds but feel free to use what works for your family.

The amount of honey needed will depend on how sweet your strawberries are. Taste and adjust.

Fantastic flavor, and super easy to make! It's perfect as is, however I added a sprinkle of salt - just personal preference. I used my mini food processor to blend everything up. Served with a delicious spinach, strawberry, red onion, goat cheese and walnut salad. Not overly sweet, and nice and tangy, just how I like my dressings. I also like that there's no oil. Read More
