This pepper steak is our kids' favorite and super easy in the slow cooker. Serve over potatoes, rice, or noodles

Ingredients

  • 2 pounds beef sirloin, cut into 2-inch strips

  • ½ teaspoon garlic powder

  • 3 tablespoons vegetable oil

  • ½ cup hot water

  • 1 cube beef bouillon

  • 1 tablespoon cornstarch

  • 1 (28 ounce) can stewed tomatoes, with liquid

  • ½ cup chopped onion

  • 3 tablespoons soy sauce

  • 1 teaspoon white sugar

  • 1 large green bell pepper, cut into strips

  • 1 large red bell pepper, cut into strips

  • ground black pepper to taste

Directions

  1. Sprinkle beef with garlic powder.

  2. Heat oil in a large skillet over medium heat. Add beef strips; cook and stir in batches until browned, 5 to 7 minutes. Transfer to a slow cooker.

  3. Stir water and beef bouillon together in a small bowl until dissolved. Add cornstarch and mix to dissolve. Pour mixture into the slow cooker. Stir in tomatoes, onion, soy sauce, and sugar.

  4. Cook on Low until flavors blend, about 6 hours, adding bell peppers during the last hour. Season with black pepper.

Cook's Note:

This can also be cooked on High for 3 to 4 hours.
