Line a baking sheet with aluminum foil. Arrange asparagus and mushrooms on the prepared baking sheet. Drizzle with oil and sprinkle with salt; toss to coat. Roast, stirring occasionally, about 15 minutes. Add butter and thyme. Toss to coat, and roast an additional 5 minutes. Arrange vegetables on a serving platter. Top with arugula, sprinkle with salt, and drizzle with balsamic vinegar. Cook's Note: You can use oyster mushrooms instead of morel mushrooms.
