  • 2 cups spring mix

  • ¾ cup cherry tomatoes, halved

  • cup chopped cucumber

  • ½ cup sliced salami

  • cup chopped red onion

  • cup blue cheese

  • cup red wine vinegar

  • 1 tablespoon extra-virgin olive oil


  1. Combine spring mix, tomatoes, cucumber, salami, onion, and blue cheese in a bowl. Whisk vinegar and oil together in a small bowl and pour over salad; toss to coat.
