These low-carb veggie fritters are made from shredded cauliflower and broccoli held together with eggs and almond flour.

  • Place broccoli and cauliflower in a food processor; pulse until shredded.

  • Combine almond flour, beaten eggs, onion, and garlic powder in a large bowl. Mix in shredded broccoli and cauliflower mixture. Roll batter into 2-inch balls.

  • Heat coconut oil in a large pan over medium-high heat. Place fritters in the pan and flatten slightly with a spatula. Cook until crisp, 3 to 4 minutes per side. Transfer to a paper towel-lined plate and season with salt and pepper. Repeat with any remaining fritters.

Cook's Note:

You can use the fat of your choice instead of coconut oil.

These fritters turned out pretty good. I really liked the nutty flavor the almond flour gave them. I think a sprinkle of red pepper flakes would take these up another notch.

I added cayenne pepper, black pepper, and some Sriracha, but still found the taste more bland than expected, and it was very dry. I did like the nutty flavor imparted by the almond flour, and I love both broccoli and cauliflower, but I'm not sure I'd make it again. I might try with even more spices, and maybe an extra egg to combat the dryness.

Great for Keto/Paleo diets but needs something more spice and some kind of sauce. Any ideas?
