  • Preheat the oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.

  • Combine oats, whole wheat flour, all-purpose flour, white sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium-sized bowl.

  • Lightly beat eggs in a large bowl. Stir in milk, oil, brown sugar, and vanilla extract. Add bananas and mix together well. Add 1/2 the flour mixture and stir to combine. Add remaining flour mixture and stir. Stir nuts into the batter.

  • Spoon batter into the prepared muffin cups, filling each 3/4 full.

  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 18 to 20 minutes.

Cook's Note:

Feel free to use pecans in place of walnuts. Crushing them will release their oils and add both flavor and moisture to the muffins. If you don't have a rolling pin, chopping them will work fine.

These are some pretty great muffins--and they don't take hardly any time to make either! I used all brown sugar, a full teaspoon each of cinnamon and vanilla, and almond milk in place of regular milk. They have a wonderful banana bread flavor with the perfect amount of spice! And while the muffin recipe is great as written, I think you could completely tailor the "add-ins" to whatever you like! I want to make them again with the addition of dark chocolate chips, or shredded coconut, or almonds---or all three! I also got 17 muffins out of this, and they were perfectly baked in 18 minutes. Healthy, hearty, homey! HURRAY for a whole grain snack my kids LOVED! House smelled soooo good as they baked, making us all feel cozy! Omitted brown sugar in favor of 1/3 c choc chips (7yr old's request). Perfect amount of sweet. :) Also used 1-2 T applesauce as part of the 1/3 c. oil, still plenty moist (this trick for reducing fat works well in muffins, just pour a bit of applesauce in bottom of measuring cup, then fill with oil). My 3 bananas measured 1 2/3 c, but a bit less would've worked. KEEPER!!! Read More

This is a quick and simple oat banana muffin recipe. I made it as directions indicated, with the exception of leaving my English walnuts whole and placing 2-3 in the top of the muffin before I baked them . You bite into this wonderful piece of nut and it is absolutely delicious.! Read More

I followed the recipe as written except I was out of nutmeg so I used extra cinnamon. It made 18 muffins, I had to reduce cooking time to 15 minutes and turn temp down to 375 as my oven gets extra hot. It still burned on the bottom a bit but again I think it was more of an issue with my oven than the recipe. They are hearty muffins and not real sweet which we liked.
