  • Heat a large, heavy-bottomed stainless steel pot over medium heat. Cook bacon until dark brown and crispy, about 8 minutes. Add onions and bell peppers and cook until just starting to soften, about 5 minutes.

  • Crack eggs into the pot; stir to break the yolks and mix eggs evenly. Heat until mostly set but still creamy, about 5 minutes. Add potatoes; toss until evenly distributed. Cook, stirring frequently and scraping the bottom, until potatoes are tender yet firm to the bite, 5 to 7 minutes. Season with salt, pepper, and garlic powder. Remove from heat and add Cheddar cheese; mix until melted.

This recipe is good for 12 to 18 eggs and 24 to 30 ounces of potatoes.

jsandeen.... Why would you rate something you haven't even tried? I'm aware that I too am doing so hoping that this 5 star will offset your 3 star. The amount of fat rendered from one pound of bacon can very greatly depending on the bacon you buy. I've been cooking with bacon fat for 40 years so I have some experience to back up that statement. If it looks like too much fat pour some off but keep it in reserve just in case. Read More

We enjoyed this. I made 2 small changes. I used sliced turkey instead of bacon and I added mushrooms. I never would have thought of cooking eggs in with hash browns. It was good. Read More
