  • Place pork roast into a slow cooker. Combine crushed pineapple, garlic, cumin, salt, red pepper flakes, and pepper in a bowl. Pour over pork roast. Cover slow cooker.

  • Cook on Low until pork roast is cooked through, about 8 hours. Remove pork roast from slow cooker, cut off any fat, and shred the meat using 2 forks. Return meat to the slow cooker and mix with the juices.

Cook's Note:

If you like, you can crisp up individual servings of shredded pork in a skillet over medium-high heat, no oil necessary.

Perfect! I'm not a fan of pineapple but you don't have to be to love this recipe. You can hardly taste it and its main purpose is to tenderize. The absolute key to this recipe is crisping it up in a skillet as the recipe submitter mentions. I made two different pineapple pulled pork today and hands down this one was the winner. Excellent! I used 1 &1/4 lb pork loin as that is what was in my freezer. I was worried about not enough liquid & added a small can of pineapple juice & cut back slightly on red pepper flakes and cumin. We had it over rice and it was great although it could have used a tad more juice- not fatty at all! Read More
