We loved this meatloaf! I used my 'magic meatloaf pan ' and it came out perfect. I did add a bit more beef and chips because I have very spoiled chickens and their eggs are much bigger than what you can get at the store.
The first night I served it with mashed potatoes. The leftovers were made into meatloaf sandwiches. Tonight I'm going to make homemade gravy and I know it will be wonderful!

I did not have pepper jack cheese so I substituted cheddar. Otherwise, I followed the exact recipe. This was delicious!! Crumbled leftover meatloaf over chips later in the week and made nachos with it.

I followed the recipe but think that I will add a spicier salsa next time and will use more veggies such as green and red bell peppers and mushrooms.

I made some modifications to the recipe because I like my food spicy. I added some adobe seasoning, salsa and jalepenos to the mix. I made a glaze using salsa and ketchup to put on top of the meatloaf.
The meatloaf was absolutely delicious. The cheese is a good binder and adds just enough flavor to complement the meat. I will definitely make this dish again.

This might be one of the best things to come out of this crazy pandemic. I had to substitute the cheese with cheddar, and only had 1.12 pounds of beef but still using all the same measurements it was still SO GOOD!!! Very moist and tender cooked for 55 minutes. I also had just shy of 1/4 cup of taco sauce and had, so filled the rest of the way with extra hot Valentino hot sauce. We like a little spice! Definitely was a good touch! And the crushed tortilla chips? This is a great substitute for breadcrumbs!! Mind is blown! I can’t got back to regular meatloaf after this guys! I served with some garlic sautéed spinach on side and. WHOAH! Healthy and delicious. Thank you for sharing this recipe with the world.
