  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.

  • Combine broccoli and water in a microwave-safe bowl. Cook in the microwave on high power for 2 minutes. Drain.

  • Combine cooked broccoli, pepperjack cheese, mayonnaise, mushrooms, and garlic powder in a large bowl.

  • Season both sides of each chicken breast with paprika, salt, and pepper. Use a sharp knife to cut a slice through the middle of each breast to create a deep pocket, making sure not to cut all the way through. Evenly stuff each breast with broccoli mixture and place on the prepared baking sheet.

  • Bake in the preheated oven until chicken is no longer pink in the center and juices run clear, about 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

EXCELLENT and simple recipe! It's very forgiving and you can add whatever you really want to the stuffing. I've done a similar recipe with spinach and ricotta cheese but the broccoli and cheddar in this one completely rocked. The only thing I did differently was pound the breasts very thin and roll them up around the filling. I then used bacon to hold it together and added white wine in the dish to when I baked it. Make this dish 1st time as directed--and you'll know Nicole loves chicken as she does soup; basically simple on hand available ingredients to put together and a time-saver to cook ( earned 5 stars )---what's there not to love about this recipe? Going in to make this a second time I thought outside the box: I took the oven ready stuffed chicken breasts....and brush coated them with BBQ sauce wrapping each one with 2-3 strips of thick cut LEAN bacon ( again recipe earned 5 stars--everyone LOVED this! ). Oh and if you tend to have extra stuffing mixture in your bowl try combining it with coleslaw cut cabbage or salad-cut lettuce and crispy bacon bits from extra made bacon slices. Read More
