  • Heat oil in large skillet over medium-high heat. Add lamb and onions. Cook until lamb is brown and onions are soft, about 5 minutes. Transfer mixture to a slow cooker.

  • Add carrots, celery, mushrooms, potatoes, tomato paste, beef broth, beer, Worcestershire sauce, rosemary, salt, and pepper; stir to combine and close slow cooker.

  • Cook on High for 7 hours. Add peas and cook an additional 15 minutes. Season with salt and pepper.

Loved it! This was a Home Run Recipe! I cooked it in my Instant Pot pressure cooker, and had to make some substitutions as my wife is allergic to onions and garlic, and I didn't have any beer on hand so used a nice Pinot Noir instead, which I also had with the dinner. Can't use Worcestershire (see onion/garlic) so made a sauce with molasses, red wine vinegar, fish sauce, and sambal oelek; amazingly close in flavor. Wife said it was the best Lamb Stew she ever tasted! I'm going to 2nd that! Read More
