  • Combine salmon, 1/8 cup mayonnaise, bread crumbs, green onion, egg white, lemon juice, and Cajun seasoning in a bowl. Mix well and shape mixture into 1/2-inch thick patties.

  • Combine 1 tablespoon mayonnaise and Dijon mustard together in a bowl. Serve sauce with croquettes.

Cook's Note:

These were so easy and delicious! I HATE cooking but my family needs to eat so I'm always searching for something quick and easy. I used a fresh salmon fillet that I had, skinned it and chopped it up. I also added a little more of the bread crumbs to firm up the mixture. I didn't have a green onion so that was left out. These were quick and easy to make and pretty tasty. They did not hold up very well and fell apart when I flipped them. I think these would stay together if they were dipped in egg and coated in bread crumbs. Read More
