  • Preheat the oven to 350 degrees F (175 degrees C).

  • Steam the package of broccoli in the microwave until heated through, 4 to 5 minutes.

  • Melt butter in a large saucepan over medium heat. Add milk, flour, and salt. Cook, stirring constantly, until mixture is thick and bubbling, 3 to 5 minutes. Add cream cheese and stir until bubbling. Remove from heat.

  • Stir in the broccoli, 1/2 cup bread crumbs, and 1/2 cup crushed crackers. Sprinkle the bottom of a round glass baking dish with another 1/2 cup bread crumbs and 1/2 cup crackers. Pour broccoli mixture into the dish. Top with Cheddar cheese and the remaining bread crumbs and crackers.

  • Bake in the preheated oven until cheese is melted and top is browned, 30 to 35 minutes.

Some good gluten-free ingredient substitutes are Pamela's(R) Artisan Blend and Van's(TM) gluten-free crackers.

Substitute Cheddar with any cheese you like.

I halved the recipe and I’m not sure if that was the issue or if it had to do with the actual recipe. By halving it; it was a disappointing side- extremely dry and bland. I saw the original post was for a gluten free version so maybe that’s the issue. Adding all the bread crumbs and crackers (used cheez-it’s) made this so dry. I wasn’t going to top with cheese for the full bake but in keeping with the recipe integrity I did. I wish I didn’t. The small amount of cheese burnt to a shell. My final product didn’t look like the posted pic. I’m giving it a 3 based on hopes that a GF version is the ticket. Read More
