Directions

  • Combine chicken and cream cheese in a multi-functional pressure cooker (such as Instant Pot(R)). Sprinkle with ranch seasoning and add water. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.

  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

  • Remove chicken and shred using 2 forks; return chicken to pot. Select low heat according to according to manufacturer's instructions. Add Cheddar cheese and bacon. Stir to combine and heat through, 2 to 3 minutes.

Cook's Note:

If you are using a slow cooker, place chicken, cream cheese, ranch seasonings, and water in the slow cooker. Cook on low for 6 hours. Remove chicken from pot and shred. Return chicken to the slow cooker and mix in Cheddar cheese and bacon.

I made this exactly according to directions and I thought it was okay. The chicken was still a little frozen so I pressure cooked for 25 minutes. The chicken turned out perfectly and after stirring the liquid with the shredded chicken for a few minutes everything came together nicely. When serving I topped the chicken with some fresh Pico de Gallo and that made the flavors really pop. Otherwise it would have been a bit too creamy for my liking. Delicious dinner and would make again! Read More

Made this today using the slow cooker (see notes section) according to the recipe except that I used real bacon bits rather than cooking up bacon myself and I added a bit of cayenne and hot sauce.
