  1. Preheat the oven to 325 degrees F (165 degrees C). Sprinkle fennel wedges with coriander.
  2. Heat oil in a large oven-proof skillet over medium-high heat. Add fennel; cook for 4 minutes. Flip. Add tomatoes, garlic, lemon juice, and salt.
  3. Transfer skillet to the oven and bake for 15 minutes. Sprinkle with feta and fennel fronds.

Did not use garlic due to allergies. It was delicious, my husband approved, and I’ve made it twice, once cut in half because there was only 1 fennel bulb.

I wasn't sure what to expect with this side dish, but, it was delicious! You got a slight taste from the coriander and the lemon juice brightened up the dish perfectly! It didn't take as long ...
