  • Line a microwave-safe plate with parchment paper.

  • Cut Brie cheese into 1/2-inch cubes. Working in batches if necessary, place a few cubes onto the prepared plate, spacing them about 1 1/2 inches apart.

  • Microwave on high until cheese cubes begin to puff up, 1 to 2 minutes, watching to be sure they do not burn. Cheese will appear to melt at first, but then it will puff up. Sprinkle paprika over cheese puffs and allow to cool before serving.

I was super excited about this recipe but did not have any luck when I made them. Maybe I used Brie that was not the right type or something but the cheese just melted when I tried it. I even continued per the directions and it just became super crispy. It made for some great cheese crisps though! Read More

The Brie did not puff up just melted into a puddle of oil. Don t wasted expensive Brie making these. Brie might do better in the oven but will only make crisps (just as Parmesan does). Read More

Against my better judgement, I tried this, but only with a small batch. Like the other reviewer, it just melted. It was 15 seconds short of the 2 min mark and starting to get crisp on the edges, so I took the blob out, blotted it with paper towel, popped some peach mango chutney on it and ate it on a cracker.
