  • Preheat the oven to 375 degrees F (190 degrees C).

  • Place artichokes on a baking sheet. Drizzle with 1 teaspoon olive oil and sprinkle with sea salt.

  • Bake in the preheated oven on the top rack until golden, about 25 minutes. Remove from the oven and let cool at least 10 minutes.

  • While artichokes cool, whisk 3 tablespoons olive oil, lemon juice, oregano, and sea salt to taste together in a large bowl for dressing. Set aside.

  • Place romaine lettuce in a serving bowl. Add artichokes and feta cheese. Drizzle with dressing and toss to combine.

Made as written and this turned out pretty good. The roasted artichokes were definitely the star but I do think the dressing could have used a bit more flavor. I think kalamata olives would be a nice addition for color as well. Overall this is a good recipe and one I will make again with a few minor adjustments. Read More

I thought this was really good! It is pretty tangy and slightly salty, which may be too much for some, but I love sour/tangy foods. Next time I might cut back on the lemon juice and replace part of it with vinegar. I used Mediterranean-flavored feta cheese for added flavor. To get a nice crisp on the artichokes, I recommend patting them dry first. Instead of 20 minutes in the oven, you could accomplish the same thing in 4-5 minutes under the broiler. 10.26.21 I did add a splash of red wine vinegar to the dressing and gave the salad a good grind of black pepper. The artichokes were very good, and like the first reviewer, I also could see adding some Kalamata olives to the salad. Enjoyed for lunch today. Read More
