  • PREHEAT oven to 400 degrees F. Place tortillas on baking sheet(s).

  • BAKE for 3 to 4 minutes or until crisp.

  • SPREAD refried beans evenly on tortillas. Spread 1 tablespoon taco sauce over beans. Top with bell peppers, green onions and crushed red pepper. Sprinkle with cheese.

  • BAKE for 7 to 8 minutes or until cheese is melted. Cut into wedges.

This was okay. Warning: Does not work AT ALL with corn tortillas, which I used the first time. They come out tough instead of crisp. I used flour tortillas the second time just as the recipe directed and it worked better. Still, I have to say a plain old quesadilla is preferable. Using the recipe as a base I made a few changes to make the dish look more apealing. I cut the tortillas in to small circles using a biscuit cutter. Baked as directed. Added minced garlic to the recipe and did a fine chop on the additional items. Spread on rounds, topped with cheese, then put in freezer and then into bags. Baked when needed and worked fine. As suggested in another review, served sour cream mixed with some salsa on the side. A little more work but an appetizer that looked great on the buffet table and plate was emptied. Read More
