  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9-inch pie plate.

  • Combine sugar, flour, and salt in a bowl. Add butter and coconut extract. Add eggs 1 at a time, mixing well after each addition. Add cream of coconut and milk. Add shredded coconut. Pour mixture into the prepared pie plate.

  • Bake in the preheated oven until set, 45 to 50 minutes.

  • Chill completely before serving, at least 1 hour.

Way too much Coconut; and not enough custard...dry. I will reduce the coconut to 1 cup and use 1 can of condensed milk instead of the sugar and the milk and add another egg. I guess this equates to a different recipe...so be it. Read More

I happened to have all the ingredients in my pantry and I'm so glad that I made this recipe. It took no time and it was so simple to make. My partner and I ate more than half of it when we pulled it out of the fridge. I'm sure rest will be gone by tomorrow so I will have to make it again! Read More
