  • Preheat the oven to 400 degrees F (200 degrees C).

  • Place chicken breasts in a 10-inch oven-proof skillet or an 8x10-inch baking dish. Season with salt and pepper. Squeeze lemon juice over chicken. Stir peach jam and garlic together and spread over chicken.

  • Bake in the preheated oven, uncovered, until juices run clear and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 1 hour.

Cook's Notes:

The recipe calls for peach jam, which is wonderful, but I have also used orange marmalade and apricot jam, which work just as well.

You can use bone-in chicken breasts, but they will take longer to cook.

10.28.18 This recipe has one major problem the baking time. I had a large chicken breast so I sliced it lengthwise into two pieces Thinking that 1 hour at 400ºF would be too long I set the timer for 30 minutes checked the temp and it already was at 194ºF. It was so dry and overcooked that I actually threw part of it away. I will try this again simply because what was edible actually tasted pretty good. I love the ease of preparation and this would be a good choice for a weeknight meal but in the future I ll start checking the temperature at 10-15 minutes. I did not have peach preserves so I used orange marmalade and this recipe definitely has potential just needs that cooking time cut waaaaay back! Read More
