  • Preheat the oven to 375 degrees F (190 degrees C).

  • Season pork chops on all sides with salt and pepper. Heat oil in a large, ovenproof skillet over medium-high heat and cook pork chops until browned, about 5 minutes per side. Transfer chops to a plate and set aside.

  • Pour broth into the same skillet over medium heat and loosen brown bits that have stuck to the bottom. Add sweet potatoes to skillet. Layer apple slices on top. Place pork chops on top of apples and cover skillet. Remove from heat.

  • Place covered skillet in the preheated oven and bake for 20 minutes. Remove lid and cook until pork is no longer pink in the center and sweet potatoes and apples are soft, about 10 minutes more.

This is a good base recipe. Other seasoning, spices and herbs were needed to wake the dish up. The pork chops were tender and moist. I will make again adding some of this and that to add to the flavor. Read More

I gave this 4 stars because it was a very easy meal to prepare and because it tasted, pork chops, sweet potatoes and apples/onions. I usually follow the recipes as written but in this case I simply had to add some sliced onions in with the apples. It was a good addition. After browning the chops I sautéed the onions and apples. Removed those and then added some white wine to the pan (rather then open a whole container of chicken broth) then added the thinly sliced potatoes and let them simmer a little (nothing worse then over cooked pork with under cooked veggies). Then proceeded as written. I was tempted to add a bit of sage or something but resisted. It does not knock your socks off but quite simply is what it is! Read More
