  1. Mix water and cacao powder together in a bowl. Add salt and stevia powder. Add coconut butter and mix well. Add chia seeds and whisk until evenly mixed and the mousse thickens, 2 to 3 minutes.
  2. Refrigerate at least 4 hours before serving.


  • Cook's Notes:
  • Important note about stevia: A little goes a long way. If you find yourself adding more than 1 teaspoon of stevia and still not satisfied with the sweetness, consider experimenting with more Himalayan pink salt, since salt brings out other flavors.
  • I use raw, organic, and stone-ground cacao powder and coconut butter.
