Ground Chicken Patties or Meatballs

"Grain free, dairy free, and low in carbs. I ran into some ground white chicken breast real cheap and intended to make meatballs, but at the last minute got lazy and made them into patties. Here's the recipe I came up with. They were fantastic, if I do say so myself. Serve with dipping sauce, if desired."

  1. Combine ground chicken, eggs, almond flour, onion, celery, chia seeds, relish, tamari, jalapeno peppers, chicken seasoning, garlic onion seasoning, and salt in a large bowl. Mix well, but do not overmix.
  2. Heat a large skillet over medium heat and coat with 1 tablespoon sesame oil. Drop large tablespoonfuls of the chicken mixture into the hot oil; flatten slightly with the back of the spoon. Cook until well brown, about 4 minutes per side. Remove patties to a plate. Repeat with remaining sesame oil and chicken mixture.


  • Cook's Note:
  • For meatballs: Roll chicken mixture into uniform-sized balls. Brown lightly in the skillet. Finish by baking at 350 degrees F (175 degrees C) for 10 to 15 minutes.

Tasty.. I made these into both meatballs an patties. I think I liked them best as one bite meatballs
