Ground Chicken Patties or Meatballs
"Grain free, dairy free, and low in carbs. I ran into some ground white chicken breast real cheap and intended to make meatballs, but at the last minute got lazy and made them into patties. Here's the recipe I came up with. They were fantastic, if I do say so myself. Serve with dipping sauce, if desired."

Original recipe yields 16 servings (16 patties)
- Combine ground chicken, eggs, almond flour, onion, celery, chia seeds, relish, tamari, jalapeno peppers, chicken seasoning, garlic onion seasoning, and salt in a large bowl. Mix well, but do not overmix.
- Heat a large skillet over medium heat and coat with 1 tablespoon sesame oil. Drop large tablespoonfuls of the chicken mixture into the hot oil; flatten slightly with the back of the spoon. Cook until well brown, about 4 minutes per side. Remove patties to a plate. Repeat with remaining sesame oil and chicken mixture.

- For meatballs: Roll chicken mixture into uniform-sized balls. Brown lightly in the skillet. Finish by baking at 350 degrees F (175 degrees C) for 10 to 15 minutes.
