Ground Chicken Patties or Meatballs
Grain free, dairy free, and low in carbs. I ran into some ground white chicken breast real cheap and intended to make meatballs, but at the last minute got lazy and made them into patties. Here's the recipe I came up with. They were fantastic, if I do say so myself. Serve with dipping sauce, if desired.

Cook's Note:
For meatballs: Roll chicken mixture into uniform-sized balls. Brown lightly in the skillet. Finish by baking at 350 degrees F (175 degrees C) for 10 to 15 minutes.
