You can use Prosecco in place of Champagne, if you like.
To make a pitcher: Mix 1 cup coconut rum, 2 cups pineapple juice, and an entire bottle of Champagne or Prosecco in a pitcher. Add pineapple slices and/or cherries to the pitcher or glasses for garnish.
