We call this bomb bomb chicken. Adjust the spice level by adjusting the sambal. Perfect for a hot summer day: Cool cucumbers with chilled chicken are topped with a spicy peanut sauce. Great as an appetizer or a cool lunch.

I replaced the oil sauce & past with Thai Peanut sauce (bottled) & blended it with the peanut butter and the water for the drizzling over the salad. We had it for lunch and it was excellent! Would suggest it as a starter if having company for Asian ribs dinner! We had a little sauce left and later had it with sliced apples! Lefsa Read More

Good! I made a few mods: instead of serving on shaved cucumbers, I added sprouted mung beans to the salad (gives it a nice sweet crunch) and served on a bed of lettuce... was also great on a croissant. Don't be afraid to turn up the heat a bit with extra sambal olek, sesame oil, and even a splash of rice vinegar. Read More
