  1. Combine peanut butter, sambal oelek, soy sauce, sesame oil, and water in a bowl to create a sauce that is thin enough to drizzle.
  2. Layer cucumber slices on a platter. Top with shredded chicken and drizzle with sauce. Sprinkle chopped peanuts on top.

  • Use a vegetable peeler to slice the cucumber into thin strips.

This is delicious and very easy to make. My whole family loved it, a perfect summer salad!

I replaced the oil, sauce & past with Thai Peanut sauce (bottled) & blended it with the peanut butter and the water for the drizzling over the salad. We had it for lunch and it was excellent! ...

Followed the recipe and I would make it again.
