  1. Preheat an air fryer to 400 degrees F (200 degrees C).
  2. Mix mayonnaise, cotija cheese, lime juice, and chili powder in a shallow dish.
  3. Roll each piece of corn in the mayonnaise mixture until all sides are covered.
  4. Place all 4 pieces of the corn in the basket of the air fryer and cook for 8 minutes. Garnish with cilantro.

I used Mexican seasoning instead of the chili powder and it was wonderful. The only way to make this type of corn.

Yummy!! This corn was delicious. I’m going to keep it in the fryer for another 2 minutes next time to make the corn a bit softer. Very good!

Great! The only thing I did different was add a little smoked paprika to give a bit of a smokey flavor. I will make this again!
