"A refreshing limeade with a unique twist. Prickly pears are now being considered as another 'superfood' with many health benefits. They can be found in various colors--red, green, yellow, and orange. One great way to enjoy this fruit is in this minty limeade. Serve cold and over ice."

  1. Cut prickly pears in half lengthwise and scoop out flesh with a spoon. Process in a blender until smooth. Push pulp through a fine mesh strainer to extract about 1 1/2 cups juice. Discard pulp.
  2. Place prickly pear juice, water, lime juice, stevia, and mint in a blender. Blend until smooth. Pour into two 16-ounce glasses filled with ice.

  • Cook's Notes:
  • Handle pears with a kitchen towel when cutting in half and scooping out flesh. Pears are covered with tiny thorns that are hard to see.
  • Use the sweetener of your choice.

Won't make it again. Regular lemonade is fine enough for me.
