  • Cut up margarine into oat milk and heat in the microwave for 30 to 60 seconds. Stir until margarine is melted.

  • Pour oat milk mixture into a blender; add whole wheat flour, all-purpose flour, eggs, wheat germ, maple syrup, and vanilla extract. Blend until well combined.

  • Preheat a waffle iron according to manufacturer's instructions. Pour 1/5 of the batter onto the hot iron. Cook until waffle is golden brown and the iron stops steaming, about 5 minutes. Repeat with remaining batter.

Cook's Note:

Substitute soy or rice milk for the oat milk if preferred.

I really liked these! They don't have an overwhelming flavor on their own but will compliment whatever you wish to top them with. I used oil (and only 1/4 cup) in place of margarine and unsweetened almond milk. They come together really quickly (especially if you use oil--you don't even have to heat it up in the microwave like you would with margarine) are easy to make and taste delicious! They also don't get overly browned when cooked but that doesn't affect the flavor any. They are crisp on the outside and soft on the inside--perfect to me!
