  1. Whisk almond milk, pumpkin puree, stevia, and pumpkin spice together. Pour mixture into ice cube trays and freeze until firm, 8 hours to overnight.
  2. Place pumpkin ice cubes and coffee in a blender; blend until smooth.

My son and I made this and enjoyed it. It wasn't quite sweet enough for us (we added some more sweetener and re-blended) but the flavor was really good. My biggest struggle was getting the cubes...
