View All Saved Items Rate Print Share Share Tweet Pin Email Add Photo Prep Time: 10 mins Cook Time: 25 mins Additional Time: 10 mins Total Time: 45 mins Servings: 4 Yield: 4 rice bowls Jump to Nutrition Facts Ingredients 1 ¾ cups water 1 cup uncooked basmati rice, rinsed 2 cups cottage cheese 2 medium avocados, cut into bite-sized pieces 1 cup deli turkey meat, torn into bite-sized pieces 4 teaspoons lemon juice 4 teaspoons soy sauce, or to taste 8 multigrain crackers salt and ground black pepper to taste Directions Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 18 minutes. Remove saucepan from the heat and let sit, covered, at least 10 minutes. Arrange 1/2 cup cooked rice, 1/2 cup cottage cheese, 1/2 an avocado, and 1/4 cup turkey side-by-side in an individual bowl. Repeat with remaining ingredients to create 4 bowls. Drizzle lemon juice and soy sauce over each bowl and garnish with 2 crackers. Season with salt and pepper.
