  • Preheat the oven to 425 degrees F (220 degrees C). Lightly grease a large rimmed baking sheet.

  • Place chicken on the prepared baking sheet and sprinkle with garlic salt and black pepper. Spread pesto over chicken and top with tomatoes and cheese.

  • Toss broccoli and oil together in a bowl. Place broccoli around chicken on the baking sheet. Sprinkle salt and pepper on top.

  • Bake in the preheated oven until broccoli is tender and chicken is no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Good, simple recipe if you go with a solid store-bought pesto. Would be even better with homemade in summer with garden tomatoes. Be careful with the seasoning on the broccoli, as the pesto saltiness bleeds down into it. Kid-friendly and a nice way to sneak in a tasty low-carb, nutrient-heavy satisfying meal. Read More

This was a tasty dish that was fun and easy to make. The changes made to this recipe were: *cutting the 2 lbs of chicken breast into 6 equal as possible pieces. Therefore the finished recipe was 6 servings. *Also changed the pinch of salt and black pepper to 1/2 teaspoon each *omitted the salt on the broccoli *used regular tomatoes vs Roma *used a 10" x 18" griddle pan for baking Note: * pesto makes melts and creates the broccoli to be favorable although a bit salty *recommend using smaller pre-packaged (8) breast size pieces or 1lb of chicken if cooking for 2 with leftovers Read More
