Tangy Apricot Chicken Thighs

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Season both sides of the chicken thighs with salt and pepper; transfer to a baking dish.
  3. Bake in the preheated oven, uncovered, for 15 minutes.
  4. Mix apricot jam, ketchup, onion, barbeque sauce, and soy sauce together. Pour over chicken thighs. Continue baking until chicken is no longer pink in the center, about 20 minutes more.

i think if i got the thighs with skin and toasted it under the broiler to make it crunchy, it might taste perfect.

This turned out pretty good. It was a little too sweet for our taste so next time I might use a tomato sauce instead of the ketchup. All in all good recipe and one that is super simple to make.

I gave this 5 stars cause it was pretty, tasty and EASY. Some nights that's more than enough ;-) You could even prep the chicken ahead of time, make the sauce and start cooking as soon as the...
