  • Preheat the oven to 400 degrees F (200 degrees C).

  • Quarter large strawberries and halve smaller ones. Place strawberries in a 9-inch pie plate. Sprinkle sugar on top and toss several times.

  • Roast in the preheated oven, stirring once, until strawberries are soft and juices are thick and bubbly, 15 to 20 minutes. Cool completely.

Cook's Note:

Substitute brown sugar or raw sugar for the white sugar, if preferred.

WOW! This was wonderful. I did use brown sugar instead of white since I that's what I learned growing up. My grandma's rule was never use white sugar with any strawberry dessert. We had it over pound cake with a dollop of whipped cream. It was one of the best desserts I've had in a long time. It does reduce in volume so you may want to double the recipe. I wish I had.
