  • Season zucchini with salt and pepper and brush lightly with olive oil.

  • Heat a grill pan over medium-high heat. Place zucchini slices, a few at a time, into hot pan and cook until the pattern of the pan is imprinted into zucchini, about 4 minutes. Turn and cook an additional 3 to 4 minutes.

  • Combine olive oil, vinegar, parsley, garlic, salt, and pepper in a small bowl. Brush cooked zucchini with olive oil mixture and serve.

This is a great recipe as it is, but if you want to step it up a bit, use with flavored olive oil, such as herbs de provence or rosemary infused olive oil. I also sprinkle grated parmesan cheese on the zucchini just before serving. This is a summer go-to recipe! Read More

Followed the recipe while cutting it in half. It turned out great and looked pretty too, really liked the twang of the vinegar. Fast and simple! Just threw some salmon on the same grill and had a nice meal. Thank you for sharing. Will do this again Read More
