  1. Heat oil in a skillet over medium heat. Cook onion and bell pepper for 2 minutes. Stir in corn and continue cooking and stirring until onion is partially translucent, about 10 minutes. Season with cumin, salt, and pepper and stir to combine.
  2. Remove from heat and stir in feta cheese and spinach.
