  • Preheat the oven to 425 degrees F (220 degrees C).

  • Scrub the potatoes and dry with paper towels. Cut into small chunks and place in a large bowl.

  • Add vinegar, oil, garlic powder, salt, sage, and tarragon to the bowl with the potatoes. Toss to coat. Pour into a baking dish.

  • Bake in the preheated oven until crispy on the outside and soft on the inside, about 45 minutes. Serve immediately.

We really enjoyed these potatoes! The vinegar was not too overpowering which was nice. I did not have any tarragon on hand so I omitted that. I will def be making these again YUM! Thanks for sharing.:) Read More

For my leftovers I put some of the potatoes on a sheet of foil and topped with Kraft shredded Italian five cheese mix and let it melt in the oven. Cheesy vinegary garlicy and salty they were even better this way. Cooking time may vary so keep an eye on your potatoes while they re in the oven. Read More
