  • For Watermelon Salsa: In a medium bowl, combine watermelon, tomatoes, green onion, basil, lime juice, salt, and pepper. Toss to coat; set aside.

  • Place sausage on the rack of a gas or charcoal grill directly over medium heat. Cover and grill for 7 to 9 minutes or until heated through (160 degrees F), turning once. Place flatbreads on grill rack over heat. Grill for 1 to 2 minutes or until lightly toasted, turning once.

  • To serve, slice grilled sausage. Divide sliced sausage among toasted flatbreads. Top with Watermelon Salsa and serve with lime wedges.

Delicious and declared a keeper by the whole family. Too rainy to grill so I brushed flatbread with olive oil topped with sliced sausage and some feta cheese (Monterey jack for my son who dislikes feta) and broiled just until bread was lightly browned and sausage warmed. Salsa was yummy but I think I d make it a couple of hours ahead next time to let the flavours blend a bit more. Read More

I ve made it a few times it s delicious and a great summertime meal. I have made some variations on the salsa. I add a finely chopped and seeded jalapeño only use 2 thinly sliced green onion s and 1 clove chopped garlic. I find it needs a little more salt and pepper as well.
