Avocado-Egg in a Hole

  1. Cut a 2x3-inch oval out of the center of each slice of bread. Reserve the bread centers for another use.
  2. Melt butter in a large nonstick skillet over medium heat. Add bread to the skillet. Cook over medium heat, about 2 minutes, or until the bottom of the bread is golden brown. Carefully flip bread slices.
  3. Arrange 2 avocado slices on the perimeter of the hole in each bread slice. Break eggs into a custard cup, 1 at a time, then slip the egg into the center of each circle. Season eggs with salt and ground black pepper. Cook over medium heat for 2 minutes.
  4. Sprinkle Gruyere cheese on over toast and eggs. Cover and cook for 1 1/2 to 2 minutes more or until egg is desired doneness and cheese is melted.
  5. If desired, sprinkle with freshly cracked black pepper.

I will make it again but with major revisions. Followed the recipe and ended with raw eggs and burnt toast. Second go was better but third try- melt butter, add egg immediately. Flip egg and toa...

I replaced the cheese with grated sharp cheddar because it’s what I had, and I used more avacado slices. Made just one, and it was delicious! I often make this egg/bread recipe

Ended up with raw egg and burnt toast. Recommended changes: after cracking the egg over avocado, cook 2 mins and then flip over to side without avocado so your egg won't be raw.
