Vegan Edamame


This easy edamame (soybean) recipe served with a dip is a great quick appetizer that can be whipped up in a few minutes. Edamame also make a healthy vegan snack.

  • 2 tablespoons soy sauce

  • 2 tablespoons rice vinegar

  • 1 teaspoon finely grated ginger root

  • 2 ½ cups frozen edamame in the pod


  1. Whisk soy sauce, rice vinegar, and ginger together in a bowl; set dipping sauce aside.

  2. Bring a large saucepan of water to a boil. Add edamame and boil until tender, about 5 minutes. Drain and rinse under cold water.

  3. Serve pods with the sauce for dipping.
