Tasty Vegan Guacamole Sandwich

"This vegan sandwich is delicious if you love guacamole (like I do) and are looking for something different for lunch. The layers stay together better when the sandwich is on a fresh roll. Serve with chips and salsa!"

  1. Layer avocado, tomato, cucumber, and red onion on the bottom half of the roll. Sprinkle with lemon juice, salt, and pepper. Place lettuce on top. Spread a thin layer of vegan mayonnaise onto the top half of the roll and place it on top of the sandwich.

Instead of the optional vegan mayo, I used a homemade pesto from this site and this turned out good. What would be even better is to make a pesto out of cilantro to get the guacamole vibe. Just ...
